CONCEPT

Roughly equidistant from Moscow and Saint Petersburg, in the Novgorod Region, lies the relict Lake Velyo—one of the largest in Northwestern Russia and virtually untouched by civilization.

This is the territory of the Valdaysky National Park: pristine nature, tranquility, and a deep harmony so often missed in the bustle of city life. Friendly locals live here, and the clear, transparent water is drinkable.

What could a restaurant on the shore of such a lake be like, and what name should it bear? The answer is suggested by the very atmosphere of this remarkable place.

“Velyo” is an interpretation of traditional Russian hunting cuisine through the lens of a modern vision. A respectful attitude toward centuries-old culinary traditions seamlessly merges here with advanced techniques and meticulous attention to detail.

The interior features exclusively natural materials. Stone and various wood species create a complex, multifaceted, yet naturally honest tactile texture. Warm and cold surfaces harmoniously complement one another.

The focal point of the dining room is a traditional Russian stove with firewood niches and an open fire, executed in deep shades of black. This element of fire is balanced by the calm expanse of the lake, visible through floor-to-ceiling panoramic windows. And the core feeling this place evokes is the profound realization that centuries ago, the surrounding landscape was just as pristine
